Let’s talk about these cookies a bit more. They’re soft on the inside, slightly crunchy on the outside, and they have a subtle banana taste which gives them just the edge that they need. They make you wonder how you could ever have questioned the concept of baking with no eggs, no butter, no milk. I can’t wait to try other vegan cookie recipes; preferably such recipes that take almost as little time to prep as it takes to eat them. Amazing, and yet true.
