Tuesday, June 21, 2011. CHILLED CUCUMBER YOGURT SOUP WITH MINT AND DILL (KALTE GURKEN JOGURT SUPPE MIT MINZE UND DILL). 1 pint organic whole yogurt. 1 large or 2 medium cucumbers. Peeled, cut in half lengthwise, seeded and cut into paper thin slices. 10 sprigs fresh mint (leaves only). 10 sprigs dill (dips only). 2 tablespoons rice vinegar. Juice from 1/2 lemon or lime. Add all except for cucumber to the yogurt and use a blender or stick mixer and blend until you can see only small bits of the herbs.
