There's not much of this soup left in our fridge, so I figured I'd better snap a picture of it before it's long gone. Not that I won't be making it again soon. It was delicious! Three-Bean Lentil Soup [Adapted]. 2 onions, chopped. 3 stalks celery, chopped. 1 1/2 cups baby carrots. 2 cloves garlic, minced. 1 Tbsp minced gingerroot. 1 cup red lentils.

As winter creeps in, I am finding myself missing more and more the lovely farmer's market I was frequenting. Over the summer we went for lunch and veggie snacks, and through the fall I was getting all my beautiful veggies there. Now, I am relegated to grocery store produce and frozen veg. Woe is me.
