Jamaican Lamb Curry -
2 heaped tablespoons Caribbean Curry Powder. 1 large onion, chopped. 2 piece of root ginger, grated. 2 cloves of garlic, crushed. 1 scotch bonnet pepper, seeded and chopped. Small (approx 2 ) piece of cinnamon stick. Salt and black pepper. Oil for marinating and browning. Approx pint of hot water. Heat a glug of oil in a heavy frying pan or wok. Patties must be one of Jamaica’s favourite street foods. Spicy, savoury fillings encased in crispy, light pastry. Traditionally, patties are made using beef, lamb, fish or chicken however I’ve played around with the fillings and come up with some equally delicious winning recipes. The Pork and Bramley Apple recipe below made it to the final of the Bramley Apple Uk recipe competition, and my recipe for Turkey Sunshine Patties won the BBC One Show competition for Christmas leftovers. 1 Scotch Bonnet chilli.
