Monday, June 30, 2014. Easy and Delicious Rice Pilaf. We eat a lot of rice. So I was really happy to find this easy rice pilaf recipe. It's delicious and so simple. 1 C rice, uncooked. 2-4 Tbl olive oil. 2 C chicken broth. 1 Tbl dried thyme. In a medium sauce pan, heat oil. Add the rice and toast on medium high until the corners of the rice are translucent and it has a nice, toasted smell. Add the broth, thyme, and salt. Reduce the heat to a simmer and cover the pan. Serve with your favorite entree.

Saturday, September 7, 2013. I love southern food. I especially love spicy Cajun food. I have a jar of Tony Chachere's Creole Seasoning that, even after 10 years, still has quite the kick to it. We had some spicy sausage in the freezer just aching to be combined with some fresh veggies, a little rice, and some appropriate spices. Here's what we got. 10 sausage links cut into 1/2 inch rounds (use your favorite flavor - but they need to be brat-sized). 4 cloves of minced garlic. 2 medium onions, chopped.

Friday, December 27, 2013. I've made this a few times without my camera handy, and I'm glad I finally got my act together enough to snap pictures making it this time. Sorry that amounts aren't all that set, but this is really is a salad to taste. 6-8 medium potatoes, chopped. 1 large onion, chopped. 6 hard boiled eggs. 5 baby dill pickles, diced. 1-1/2 - 2 C mayonnaise. 4-5 squirts spicy brown mustard. I was looking on the internet for a brownie recipe that was more like boxed brownies than cake brownies and found this delightful (and not too hard) recipe at Inspired Taste. Everyone loved them. Wednesday, February 12, 2014. 1 can Holland Rusk. 1/4 butter, melted. 3-8 oz. pkg cream cheese, softened. 1/2 pint sour cream. Preheat oven to 375. Crush rusk into crumbs. Set aside 1/3 C crumbs to sprinkle on top. Combine remaining crumbs with cinnamon and sugar. Melt butter and add to crumb mix. When well mixed, line 10-inch springform pan with mix. Press with thumbs until smooth. The crust may ride up the sides of the pan a bit, but that's okay. Add eggs, sugar, and vanilla. Posted by one crazy girl.
