Dark, Soft Dinner Loaves. 1 cup warm water. 1/2 cup orange juice. 4 tablespoons unsalted butter, cut unto 6 pieces. 2 1/4 cups whole wheat flour. 2 1/4 cups bread flour. 1 3/4 teaspoons salt. 2 tablespoons Dutch-process cocoa powder. 2 1/2 teaspoons instant yeast. 1 Combine all the ingredients and mix and knead until you have a soft , smooth dough.
