Friday, June 8, 2012. Flavors from the east. I haven't tried to do a whole lot with Asian food, so this month I'm trying a few different things. Spicy Thai food was my favorite delivery food pre-Keto. This dish had a great flavor and bok choy done at home is so nice and crisp. wish I'd started making curries at home sooner! The net carbs on this was 17g each, but we've both gotten to the point where we can easily stay in Keto at 80g of carbs (although we rarely if ever go that high! Eight baby bok choy.

Thursday, January 26, 2012. For Christmas Doug's mom and husband sent us a wonderful gift (particularly wonderful since we've been so busy) of assorted pre-prepared meals and meats from Omaha Steaks. He had not told them about his diet (so we were super lucky not to get fruit or sweets! And the 65 pounds he's lost, so they did not know that we have switched to grass-fed and that our poor, tiny little freezer took some serious organizing! What we did decide we wanted to get on hand and freeze is burgers!

Wednesday, February 20, 2013. First meal is a success! I've been gradually adapting recipes I have made before to our new 150 Keto Plan. The pesto I used. Is made locally, but there are plenty of versions out there, or you can make your own. I was lazy as mine is. Pretty darn close to homemade. It also comes as a paste, and you add butter to create the pesto. I simply used the paste, which gave a great flavor for this dish. Monday, May 7, 2012. A tangy twist to salmon. This whole meal was really fast, so will likely become a favorite. The salmon recipe was courtesy of snoregonwaits on Reddit. I made the salmon and put the packets in the refrigerator a few hours before I actually cooked them and the rest of the meal. I didn't have frozen artichokes on hand, but I had some brined in a can. It's sweeter than soy, so I use a tad less than the recipe calls for and toss in a pinch of ginger and/or garlic to balance it out. Spicy Garlic and Pepper Shrimp. Shredded — 700g. Minced — 36g.
