As you all know, we have kept Chesney in a "bubble" the first four months of her life. She was only "allowed" to leave to go to the doctor or to Grandma Barbs or Grandma V's house. Cole, Callie; Chesney, and Cain. Sunday, February 20, 2011. Wow, shes 11 weeks. I cant believe how bad i am at keeping this blog updated. wow, i suck! I guess im just too busy being a mom to get on here and update it! But have no fear, im here and i have an update! Lets see, shes going to be 11 weeks on tuesday. can you believe it? Where has the time gone? She went to the doctor on february 7 for her 2 month check up. she weighed in a a whopping 12lb 1oz and 23inches. holy moly! Growing like a weed!

I was really in the mood for something with great Asian flavor, but being that I am going vegan and that I count calories, ordering takeout just wasn’t really an option. Additionally, I didn’t have a lot of time on my hands, so making some sort of Asian dish from scratch seemed out of the question as well. I came up with this quinoa-based Asian dish and it turned out great! 1 cup uncooked Quinoa. 1 1/4 cup Water. 1/2 cup Edamame, frozen or fresh will work.
