I still hadn't quite got my menu-planning mojo working the next day, and also hadn't made it to the shops yet, so i decided to see what we could find locally to make into a meal. I realise it has been a little while again, mainly because I have reached a core of good regular recipes I use, but also because I simply have less time to blog when I do do something new. But I still add pics to my various social networking sites, and when I get lovely feedback, it impels me to update this blog. The smaller kids have little thalis which are less intimidating.

In fact, because I made mini muffins, the thing that took the longest was the spooning of a teaspoon of mixture at a time into tiny muffin tins, the making of the batter took no more than 10 minutes, including finding and measuring all the ingredients. 1 cup plain flour. 1 cup wholemeal flour. 1/2 cup caster sugar (I used a bit less and it was fine). 2 tsp baking powder.

I heated this to a boil, simmered (stirring lots) until thickened and then I mixed it into the mashed bananas. I allowed it to cool a little (while we ate supper) and then we tucked in. Very quick and easy and tasty way to use a butternut squash. Peel and dice a butternut squash and fry in a little olive oil with one finely chopped onion and a teaspoon of cumin seeds. Once the onion is soft, and the squash is starting to colour and soften, add a teaspoon of Marigold powder and a pack of Pedon Bulgar and Quinoa mix. Share back and its even nicer!
