Hello again, world! April 21, 2014. I’ve taken a nearly 3 year blogging break. (Where does time go? During my lunch break today, while eating a salad with sprouts I grew on my countertop, a salad dressing and a sauce both made from herbs in my garden, kombucha I brewed in my pantry, and while simultaneously surfing the web for what type of veggies to plant in my raised beds in the back yard that will withstand the TX summer heat- I thought, wow- I need to blog about this! Vegan Chocolate Chip Shortbread. July 9, 2011. Hi everyone. Wow, it has been a little while since my last post. I was in DC last weekend for the 4th with my family there and for a college friend’s wedding. The cupcakes above were made by my little sister Madisen who is obviously a budding baker! Carrot cake cupcakes with marshmallow halves (small ones for the chrysanthemums and large ones for the tulips). And this was her own idea, creative, no? A good baker and a good decorator! 1/4 tsp iodized sea salt.

Polenta Stuffed Portabella Mushrooms. July 25, 2011. I tried to figure out what it was stuffed with, and I think it must be a lot of cheese. I thought it could have been some grain mixed in there, maybe breadcrumbs? And some spinach. And tomato sauce on top. Zack thought these were the best things he had ever eaten. And they were vegetarian! As good (Zack agreed). To make this more like the Simply Delicious mushroom I would probably triple the cheese here! Enough blabber, here is the recipe for my version.

July 18, 2011. This weekend I decided it was time for some more veganizing/whole-graining of a Cheeseboard Bakery. Item I think the bran muffins frightened my office mates last time, so this time I wanted to pick a bit more of an eye pleasing item. I’m always brave to try adding whole grain flours and removing dairy items, but this does not always turn out well for me. In this case, it did!
