There was also a selection of gluten free desserts on the menu including cheesecake and crumble. I had a Peanut and Caramel Tart with ice cream. The tart turned out to be an Almondy. Here is the a recipe for a simple small gluten free Victoria sandwich cake. 175g caster sugar or I used 190g dextrose. 175g gluten free SR flour i used doves farm flour. 1 1/2 tsp Gluten free baking powder. No refined sugar jam I used St Dalfour strawberry or regular jam. 2 x cake tins 18cm ( 7inch). Grease and line tins. Cream together fat and sugar. Put on wire tray to cool.

Today is my niece’s first birthday, yesterday was spent baking in readiness for the celebration family lunch party. I bought some tasty gluten free Cumberland sausages and chicken nuggets from Marks and Spencer’s along with some cocktail sticks for a retro birthday feel.
