Forget The Chocolate: Oatmeal and Molasses Muffins. Last night I found myself thinking of breakfast options for my kid. Lately, she hasn’t been into eggs, no matter the style, and porridge has been making her cringe. We…. Baking Memories: All Rye Borodinsky Bread. Borodinsky bread is my childhood staple food. We had it practically every day and never grew tired of it. The aroma, the well balanced sweet and sour, the substantial “meaty”…. Enough with the cravings, already! My Take On Quintessential Sourdough | Bake Already!

https://bakealready.com/2014/06/18/my-take-on-quintessential-sourdough

My Take On Quintessential Sourdough. Dan Leader’s book. Features, among other things, Quintessential Sourdough loaf, which can be infinitely varied with fillers, toppers, etc. One thing that I wanted to avoid in my all wild sourdough loaf was vast quantities of white flour. Notes for future bakes:. Add all-purpose white instead of bread flour to try. Baker longer to see what that does. Quintessential Whole Wheat Sourdough. Yields 2 medium loaves. Stiff starter 8-16 hours. Fermentation 2-1/2 to 3 hours.

Kartoffelbrot (Potato Bread) | Bake Already!

https://bakealready.com/2014/06/18/kartoffelbrot

This recipe was found on a Russian site here. Complete with gorgeous photos, detailed explanation of the process and a link to the previous recipe interpreter. I don’t know what the original is, and who the author is. Makes 1 standard round loaf. Source: ХЛЕБ and ХЛЕБ. Kneading 4 minutes, 10 minute rest, 12-15 minutes. Final Proof 50-90 minutes. Baking 35-40 minutes, with temperature adjustments. 80 g active mature rye starter, thickened to porridge consistency (German rye starter). 364 g bread flour.

Rustic Italian Kamut Sourdough. Tried this one last week because I loved the pictures on the original blog here:. Http:/ www.myitaliansmorgasbord.com/2013/04/25/48-hour-italian-rustic-sourdough-loaf-with-kamut/. Excellent bread. Excellent process description. I followed the recipe precisely, nothing to add. Will definitely be making again. Enjoy the pictures of my rendition. This entry was published on August 15, 2014 at 12:16 pm. It’s filed under Bread. Older: Ancient Sicilian Whole Wheat Bread.

Black Bagels Quest | Bake Already!

https://bakealready.com/2014/07/17/black-bagels-quest

Per recommendation of the site owner of Хлеб and Хлеб. I tried a proven standard recipe for the purpose of making black bagels. I had to make a couple of tweaks to achieve proper dough consistency, and experimented with different bulk fermentation and proofing schedules. Made two batches on two different days. Second batch came out closer to what I’ve been looking for — chewy but not overly hard bagels with light tang, moderate sweetness accentuated by raisins. Yields 12-14 standard 4.5 oz bagels. 18 g s...

Sourdough Rye Crackers | Eat Already!

https://eatalready.com/2015/06/30/sourdough-crackers

June 30, 2015. I found this recipe on another blog and I liked it well enough to try it out. My bread starter was whole wheat, and the flour was rye. The crackers are very easy to make. Since I followed the recipe exactly, there is no need to re-type it. Just follow the link and start baking. Rye Sourdough Crackers 84th&3rd. For my batch, I sprinkled one half of the crackers with salt and curry spices, and the other with salt and chipotle. View all posts by Eat Already! July 1, 2015 at 7:56 am. Partying ...

July 23, 2014. Are you sick of the squash yet? You know what I am talking about — the abundant never-ending crop of zucchini and yellow crook-necks have most certainly made it to your kitchen by hook or by crook. I know I got quite a few of them from my husband’s office. 1/4 large red onion. Salt, fresh ground pepper to taste. Squash Saute With Tomatoes. 1/2 large red onion.
