Sunday, April 3, 2011. 4 slices of wholemeal bread. 1 ripe avocado mashed. 1 tsp lemon juice. Chili flakes and ground cumin seeds to sprinkle. Toast the bread, while that is cooking peel, stone and mash the avocado in a large bowl. 2) To the mashed avocado add the lemon juice and salt to taste and mix well. You can add a little cayenne pepper if you like some kick. 1 T canola oil. 1 T margarine or butter. 1/4-1/2 cup diced onion. 3/4 cup diced carrots. 4 cups peeled and cubed butternut squash (about 1 large squash). 3 cups vegetable broth. Salt and pepper to taste. Ground nutmeg to taste. 1/2 cup heavy cream (optional). Heat the oil and melt butter in large pot over medium heat. Add onion and cook until tender.

I first had them eight or so years ago when my coworker made them at an office waffle party. (It seems a lifetime ago that I actually worked in an office.). The recipe makes quite a lot of batter, and I just refrigerate whatever batter doesn't get used and make more the next day. It works perfect- much better than reheating day-old waffles.
