I never had a really close relationship with my father. I don’t think he knew what to make of his growing daughters. I know that with his grandsons, he adored them as infants and small children. Once they got big enough to talk back to him, he began to lose interest. Oh, how I loved to go with him to the ball game!

It looked good but had way too many calories and dairy. I decided to try my hand at 'slimming' down a recipe. This one turned out delish! Slimmed Down Gooey Artichoke Bread. 1/2 a loaf of french bread. 1/2 of a 14 oz can of artichoke heart. 1/2 cup of baby spinach, chopped. 3 oz of cream cheese (I used the chive onion version). 5 Sprinkle with cheese.
