Since starting on my weight loss journey I’ve had many demotivating moments and have even gone through the whole “I cannot be bothered” stage. Apple and Rhubarb Pie with Coconut Whipped Cream. 5 medium sized apples. 2 sheets of short crust pastry. 1 sheet of puff pastry. 1 cups solidified coconut cream (from 2 x 375ml pre-refrigerated canned coconut milk). 1 tbs ground cinnamon (more according to taste). Tsp vanilla extract (more if you like it really sweet).

Ontem logo que cheguei de Pequim meus amigos me mandaram mensagens e queriam me encontrar pra por as fofocas em dia. Adorei o carinho, e é claro que a programação típica de domingo foi 'brunch', pedicure e manicure. Que eu aproveite o dia e tenha mais pensamentos positivos.
