Tuesday, September 22, 2009. Mediterranean Stuffed Bell Peppers. The other day I tried a new recipe. Which included an ingredient that was also very new to me. It called for Quinoa. If you were like me than you were thinking, what is quinoa? According to wikipedia, it’s “a species of goosefoot ( Chenopodium. Is a grain-like crop grown primarily for its edible seeds.” Quinoa can be used as a rice and/or couscous substitute. The stuffed peppers did look really colorful and yummy! Oh and I do like quinoa!

Monday, February 15, 2010. A few weeks ago I went to a restaurant. And tried ratatouille for the first time. It actually was a sandwich. Which for some reason intrigued me. I LOVED it and have been talking about it ever since. So this evening I set out to recreate the sandwich. I found this recipe. For me the prep time was about 45 minutes, but I'm pretty slow when it comes to chopping veggies. Here are all the ingredients, ready to start cooking. Onions and minced garlic added to the hot olive oil.

Since I started working out and eating healthy, I am happy to say that I have lost 16 POUNDS. 8220;I am soo proud of you”. I only look back.
