It is easy, delicious and a great summer snack. I reccomend making them the night before and letting them sit in the fridge overnight.or at least chill 2-3 hours before serving. Thursday, May 20, 2010. Spaghetti with Spring Spinach and Tomato Sauce. I love the taste of home made spaghetti sauce. Once you make it for yourself, you never want to go back to a jar! But it's tough on a weeknight. You're home from work. Would love some fresh sauce for your spaghetti but there is none in your freezer and you don't have the 8 hours neccesary to throw together the perfect all day long simmered sauce. Spaghetti with Spring Spinach and Tomato Sauce. 2 servings, 5 pts each. 1 tsp olive oil.

Friday, January 06, 2006. Super Easy White Bean and Rosemary Dip. 1 15 oz can of cannellini beans, drained. 2 tbsp olive oil. 2 tsp dried rosemary. Combine all ingredients in food processor and pulse until smooth. Add salt and pepper to taste. Serve immediately or refridgerate for up to 2 days. Serve with pita chips (To make, cut pita bread into triangles, drizzle with olive oil and salt and bake in single layer on cookie sheets for 6 - 7 minutes at 450 degrees). I like to serve it with baked whole wheat pita chips . (from CookingLight.com). Fabulous Middle Eastern Eggplant dip. 1 large eggplant (about 1 1/4 lbs) peeled and chopped. 1 cup red onion, roughly chopped. 1 red bell pepper chopped. 1 tbsp olive oil. 1 large garlic clove, chopped. 1 tbsp tomato paste. The only modifications I made were to add chopped garlic and pepper to the fritters and I used fresh breadcrumbs with the tomatoes (threw a couple of sandwich thins in the food processor). Tuesday, December 26, 2006. Baked Feta with Marinara. Adapted from Cooking Light). 2 garlic cloves, minced. 1 (145-ounce) can diced tomatoes with Italian herbs. 4 oz crumbled feta cheese. Preheat oven to 350°. Mix tomato and garlic in small bowl. Sprinkle feta evenly into small and shallow baking dish. Top with tomato mixture. As I have mentioned previously, Adam and I signed up for a CSA. Share at the beginning of the summer and so every Friday we receive. A burgeoning bevy of delicious summer produce. Them Pickled. Roasted. Boiled. Grated Raw. What is up? But it's so much more fun to say aubergine, no? I was sure of a few things. I didn't.
