a simple challenge: July 2011
http://asimplechallenge.blogspot.com/2011_07_01_archive.html
Healthy, sustainable living. Wednesday, July 27, 2011. I love Darya Pinto's reasoning for not counting calories. In her recipes. Food is about quality, not quantity, and all calories are not created equal. Is it trash or is it dinner? This great NY Times article may potentially help you to rethink edible food. It is fascinating to think about how much food we do throw out, even though we could eat it. Photo courtesy of NY Times). Just some food for thought. Recipes to be posted later this week! There's j...

a simple challenge: Primal Quiche
http://asimplechallenge.blogspot.com/2012/06/primal-quiche.html
Healthy, sustainable living. Saturday, June 16, 2012. A lot of recipes I found were for crustless quiche, but to me, that seemed to take all the fun out of eating quiche. Then I discovered this recipe for paleo quiche. The recipe is written in a blog format with a video, but here's the gist:. 1 cup almond meal. 1 large egg (mine was from a local farm). Press crust mix into pan; spread out with fingers. Bake crust at 375 for 10-15 minutes until the edges brown. It was nice to make a meal other than grille...

a simple challenge: Slow down, you move too fast...
http://asimplechallenge.blogspot.com/2011/11/slow-down-you-move-too-fast.html
Healthy, sustainable living. Sunday, November 27, 2011. Slow down, you move too fast. As a pregnant, CrossFitting mama to be, I sometimes feel pretty invincible. Up until two weeks ago, I was still doing 20 inch box jumps and only switched to step ups at the request of one of the coaches. I still use the barbell (albeit lighter weights and I'll take oly lifts from the hang, not the floor). And I get pretty awesome pictures. Taken that look like this:. We've been waiting for you! And thankfully, the baby'...

a simple challenge: November 2011
http://asimplechallenge.blogspot.com/2011_11_01_archive.html
Healthy, sustainable living. Wednesday, November 30, 2011. On Monday, I went to see one of my midwives who made me laugh as I recounted our ER story. She was particularly disgusted with the ER nurse who couldn't find the baby's heartbeat and exclaimed in exasperation, "you should have yelled at her that you wanted a new, competent nurse! I appreciated her candor. So on that note, anyone have any good movies/TV shows on Netflix/books to recommend? Sunday, November 27, 2011. Slow down, you move too fast.

Healthy, sustainable living. Sunday, June 17, 2012. I've officially retired our Bumbo. What else can I use to occupy my little Peanut while cooking? June 19, 2012 at 10:35 PM. GEEZ, thank you for posting this! We only recently got a Bumbo and have been using it to feed Alex his morning egg yolks. I highly recommend the Baby Bjorn Babysitter balancer for use while cooking! a simple challenge: December 2011
http://asimplechallenge.blogspot.com/2011_12_01_archive.html
Healthy, sustainable living. Saturday, December 31, 2011. My biggest regret of my pregnancy was how quickly and easily I abandoned my primal eating habits. (Check out Mark's Daily Apple. For more information about a primal lifestyle). It was a slippery downward slide. During my first trimester, I didn't gain any weight and easily fell into the "I'm pregnant, so I can eat whatever I want! Since slipping on my primal principles. I should iterate here, that while eating primal last year, I never really ...

a simple challenge: February 2012
http://asimplechallenge.blogspot.com/2012_02_01_archive.html
Healthy, sustainable living. Thursday, February 16, 2012. Things I'm learning. Part 1. A quick blog post before Miss Eleanor wakes up of things I'm learning as a new mom:. The baby dictates labor and delivery. Recovery from labor is hard. If you plan on breastfeeding, get a lactation consultant. I shouldn't have mommyhood figured out yet. I don't always want visitors. Know that I want you to meet and love my child, but I also need some space. Although if a visitor wants to watch her so I can take a s...
