It's one of those dips that people look at it like."beer cheese? But then they try it and can't stop eating it. Sally always made the dip with a darker beer and I think that is what makes it so good; more depth and flavor in the end result. I used Boulevard Pale Ale - it's kind of a medium-dark beer.
