Saturday, October 11, 2008. Peel, core, and slice enough apples to fill your jars (only prepare as many as your canner will hold) and place them in a bowl of cool water with lemon juice (to help prevent browning). I prepared enough for 7 jars. In a large saucepan, combine:. 4 1/2 cups sugar. 1 cup cornstarch (or 1 1/2 cups maxigel). 2 tsp ground cinnamon. 1/4 tsp. ground nutmeg. And then bring to a boil over medium heat. Boil for 1 minute. Add 1 Tbsp. lemon juice. 1 cup brown sugar. 1/2 cup pecan pieces.

Food Storage
http://youcancan.blogspot.com/2009/08/beef-stew-yield-lot-more-than-recipe.html
Wednesday, August 19, 2009. Yield: a LOT more than the recipe says. The recipe says it will make 7 quarts. Well, it did make 7 quarts PLUS enough for a family of 6 to eat for dinner and enough leftovers to feed 2 adults. So, I'm guessing maybe 10-11 quarts. 4-5 pounds beef stew meat. 8 C sliced carrots. 3 C chopped celery. 3 C chopped onion. 12 medium potatoes, peeled and cubed. 1 1/2 Tbsp salt. 1/2 tsp. pepper. I also added some Montreal Streak seasoning). Thanks for posting this! I made this and it tur...

Tuesday, August 25, 2009. I did the Apricot Jam the same way that I did the Strawberry Lime Jam - except without the lime juice. My older sister added some raspberries to hers, which sounds amazing. 5 C mashed apricots. If you like a sweeter jam, you may want to add more sweetener. Mix ingredients in a large pot and bring to a simmer. Spoon hot jam mixture into hot jars and process in a boiling water canner for 20 minutes. Don't forget to boil your lids before putting them on the jars. Mix all ingredient...

Food Storage: BJ's pasta sauce
http://youcancan.blogspot.com/2008/11/bjs-pasta-sauce.html
Sunday, November 23, 2008. To adapt this recipe for canning, just multiply the above recipe as many times as needed. Do not cook additional vegetables at all. They will get cooked in the pressure canner. Process at 15 lbs of pressure for 90 minutes. Your veggies may be slightly overcooked, but the meat will be safe.and that is the important thing.
