Sunday, September 21, 2014. 6 Large Bell Peppers, Tops, seeds and ribs removed. 1 Package of Jenni-o Lean Ground Turkey. 1 C Cauliflower, chopped into "rice". 1/2 C Onion, chopped. 2 tsp Garlic minced. 1 C Tomato, chopped. 1 tbs Kosher Salt. 1 tbs Italian seasoning. 1 tbs Olive Oil. 1/2 C Prepared Tomato Basil sauce. Heat oven to 350. Saute onion and garlic in olive oil until tender. Add ground turkey and brown. Add Cauliflower, tomato and cook for 10 min to cook off liquid. Stuff each pepper to the top.

The egg muffin recipe is one you can make in advance and have leftovers to simply reheat for a quick breakfast. I adapted this recipe from several I have seen online. Veggies of your choice (anything you may like in an omelet; spinach, mushrooms, bell pepper, tomato). Meat of your choice (diced ham or bacon). Salt and Pepper to taste.
