因為女兒的關係,我開始走入廚房,從來都不下廚的我,就先從蛋糕開始吧。 Monday, June 29, 2015. 好一陣子沒做戚風蛋糕了,很想做一個吃,做那一種味道好呢,找找我以前做過的戚風蛋糕,原來也做過很多不同的味道,但也總有未做過的,找來 初學者也ok自己作職人配方的戚風蛋糕. 起初,我對戚風蛋糕的興趣不大,因為我喜歡濃濃的牛油味,所以不太喜歡戚風的清淡,但是,做戚風蛋糕是會上癮的,而且當你成功做到時,是會很開心的,做多幾次,吃多幾次,漸漸又喜歡它的清淡,吃多了也不覺得有罪疚感,而且它的味道也真的很多,以前會做蛋白較多的戚風食譜,現在則多數用蛋白和蛋黃同量的食譜,這樣較不會浪費,也不用花心思去想,剩下的蛋黃如何處理才好. 因為女兒的關係,我開始走入廚房,從來都不下廚的我,就先從蛋糕開始吧。 Friday, July 25, 2014. 暑假開始後,忙忙碌碌的,很快便過了一半,天氣熱得很,想吃些令人覺得涼快的食物,不用多想,做一個近期甚為流行的玻璃啫喱吧. 65292;很簡單的,啫喱嘛,小朋友也會做,食譜用的是魚膠粉,我沒有魚膠粉,改了用魚膠片,其實都是一樣,但我的份量有點不準,所以啫喱有點軟身,切得不太好,我不是太愛吃煉奶的,所以是抱着不太好吃的心情去吃,但味道真不錯啊,有點出乎意料,我愛不愛吃不重要,最重要的,還是孩子們愛吃. 因為女兒的關係,我開始走入廚房,從來都不下廚的我,就先從蛋糕開始吧。 Thursday, January 29, 2015. 又接近農曆新年了,還有兩個多星期便到,比較少做中式糕點的我,因為女兒愛吃,也來試一試做蘿蔔糕這中式糕點. 看了很多的食譜,大致上都是差不多的,只是麵類有點不同,最後用了 入廚最樂. 的食譜,因為覺得這個較傳統,每個食譜的做法基本上是一樣的,我比較喜歡吃蒸的,所以我用小盅去蒸,這樣可以一盅盅的吃,這食譜的味道,很像兒時吃媽媽做的蘿蔔糕的那種味道,很不錯的,也不難做,以前聽朋友說做蘿蔔糕,感覺好像很難做,原來也不是,最難的部份應該是刨蘿蔔絲吧,但現今的廚房,已有很多的機器可代人手去刨,可以很輕鬆的便做好,以前我們每年都買不少蘿蔔糕吃,以後可以不用買,而且不必等過年才可以吃. Friday, August 22, 2014. 最近忙得很,一轉眼暑假便要完結了,孩子們都很忙,差不多沒有放過假一樣,每天忙忙忙,學這學那,去這裡上課到那邊練習,比上學還要忙,沒甚麼時間休息,沒辦法,他們年紀漸長,功課便漸深,只有努力,成績才追得上. 雖然已進入秋季,晚間也轉涼了,但白天還是很熱的,前陣子,看報紙介紹一間新的雪糕店,雪糕放上一小塊honeycomb,我覺得很有趣亦很簡單啊,去超市買來有honeycomb的蜜糖,想買較濃味的蜜糖,但只有較淡味的Acacia honey才有honeycomb,用了 我♥冰淇淋. 的食譜,雪糕比平時做的來得軟滑,會不會是因為蜜糖有潤膚的功効,連雪糕也變得軟滑呢? 因為女兒的關係,我開始走入廚房,從來都不下廚的我,就先從蛋糕開始吧。 Monday, December 22, 2014. 近這一個月,非常的忙碌,兩個孩子分別參加了校際朗誦節,田徑比賽,各區的羽毛球比賽等等,一星期七天都要練習,還要做功課和補習,真的太辛苦了,不明白為什麼所有比賽都在同一時期進行,明年不會再參與,難為了家長,也難為了孩子. 假期開始了,又要為節日慶祝作準備,今年沒有做薑餅屋,因為女兒說想做薑餅人多一點,也好,買了好幾年的薑餅人模子一直沒用過,正好派上用場,去年做薑餅屋時,覺得麵團擀得太厚,今次要擀得薄一點,做出來的薑餅人才不會過胖,我很滿意今次的成果,簡單的一個薑餅人,已令聖誕氣氛變得濃厚. Sunday, August 24, 2014. 正好今年没有特别想做的月饼,就想一定要做这个让我想了“多年”的月饼食谱. 做之前去了蓝鲸鱼和东东的部落格寻找食谱,看东东用的是牛油,刚好我只有牛油没有planta,所以就取了东东的食谱。 东东的做法是把粉类混合后加入切块的奶油用手搓成粒状,我对这类饼干皮的概念从来就是尽量不要多搓,以免饼皮变硬。这样的想法,却让我的这个上海月饼酥到一碰就碎。。。哎。。 现在想想,以前做这类饼皮是会经过无数次的杆平再造型,但现在这个月饼皮却不需要经过那些工序,难怪我的月饼皮会这样啦。。。=.=' ' '. 65292; The Kitchen 70's. 以月饼馅料 52g :月饼皮 45g (有加蛋黄的请在月饼馅料那里减掉蛋黄的重量,反正加起来是52g就可以了). 用月饼皮包起月饼馅,搓成圆形,排放在烤盘上,刷上蛋黄液,入预热烤箱,190度,30分钟,至月饼皮呈现微黄就可以了。 食谱里的淡奶是susu cair,我没有,就用Anchor鲜奶油代替。 咸蛋黄烤过头了。。。都不好意思放切面照片来看看了。 Thursday, August 14, 2014. Tuesday, February 25, 2014. 苏联妈妈也做了几次,并告诉我很好吃。柠檬口味的蛋糕一直是我心头好,加上它讨喜的颜色组合,怎有不做的道理? 做之前就想要这种柠檬酱流下来的效果,虽然还做得不够好,但整体还是很满意的。 65289;,原食谱来自Alex Goh老师. 幼糖 80g (我用110g). 柠檬汁 90g (. 牛油 60g (我用90g). 细沙糖 20g (30g). 1)把(A)料倒入小锅里拌均。用double boil煮至松发然后将它过滤。 2)加入(B)继续搅煮至浓稠。离火,待冷备用。记得盖上保鲜纸。 我是先把柠檬汁柠檬皮鸡蛋糖一起煮,一边煮一边搅拌,一定要不停搅拌以免混合物底部焦以及鸡蛋变蛋花,煮到它有些些稠后立刻关火,过筛,之后加入牛油,再用小火搅拌至牛油溶解,等柠檬酱达到想要的浓度就可以了。不要太稠,要不然很难抹平的。 三片分割好的蛋糕。将一片蛋糕体放在底部,抹上一些鲜奶油再铺上柠檬醤。重复至第三片蛋糕体铺完。随意装饰。 挤在蛋糕边缘让其自然流下(要做我这样的造型,柠檬酱挤一点就行了,因为它会再流下一些). 拜拜蛋糕 and 戚风 -.
