Cooking my way through life. White Bean Chicken Chili. On November 23, 2009. For the 2009 Hallowe’en Chili Cookoff at work, I brought in three entries (one for each category! This was my entry in the “wild-card” category. Where anything goes: vegetarian and ICS rules were the other categories.) I always wanted to make a white bean chili and this one actually turned out to be pretty good (though the seasoning was definitely NOT your average chili flavour! 1 big soup pot. Spice grinder (to crush the seeds).

365 days of food. These cookies are so incredibly good! Not only do they deliver on coconut flavor, but the oil makes them so “buttery” without butter! And you can’t help but feel like you’re doing something good for your body by indulging in one. or two… or three! Rather than scoop my dough onto cookie sheets, I actually rolled them into balls and then lightly pressed them flat onto the sheet which gave me better looking cookies. This is especially nice if you plan to give some away. 1 tsp baking powder.
