Tuesday, February 23, 2010. An Alternative to Skyr and Greek Yogurt. I’ve gotta’ thank my diabetic class instructor for pointing this one out. If you have a Kroger or Kroger-owned grocery chain in your area (Fry’s, Fred Meyer, etc), check out the yogurt section. There you may find CARBmaster “yogurt”. Yogurt is in quotes above because this is technically a “cultured lowfat dairy blend.” But, for all intents and purposes, you can think of it as yogurt. It has 6% of RDA for Vitamin A. 15% RDA for Vitamin D.

Sunday, January 31, 2010. First Good Blood Glucose Reading. Well, today was an exciting day. My blood glucose reading dropped significantly to 119. Previous mornings it had been 165 then 157. I've been putting myself on a pretty strict low-carb diet, averaging 20-30 carbs per day. It's too soon to tell if this will continue but this is the first hopeful sign I've had. Links to this post. Saturday, January 30, 2010. Skyr to the Rescue. Similar to strained yogurt. Technically it is a very soft cheese.

Saturday, February 6, 2010. Breaking the 100 Barrier. Well, this is exciting news. This morning my blood glucose level read 99. That's the first time I've dipped below 100 and significantly lower than my previous low of 108. Yesterday I also had a "low-carb" meal replacement bar.
