I Hackney i östra London gör väldigt goda surdegsbagels. 100 g aktiv vetesurdeg. 1 dl ljummet vatten. 10 g färsk jäst. Ca 150 g specialvetemjöl. 3 - 4 l kokande vatten. Har du inget maltextrakt kan du byta ut det och sockret mot 15 - 20 g brödsirap. 1 Blanda ihop ingredienserna och låt degen vila i 20 min. 2 Knåda degen var 15:e min i en timme. 5 Koka upp vatten i en gryta.
