The coconut didn't come through as strong as I expected but the lemon zest lifts the whole thing. Next time might get some lemongrass in there too. Worth doing again. One onion, finely chopped. Half an aubergine, quartered and sliced. 300g chinese or spring greens, sliced. Half an onion, sliced. Two tablespoons vegetable oil. Chocolate and Courgette Muffins. 5oz/ 125g of plain flour. 2oz/ 50g of cocoa. 1 teaspoon of baking powder. 1 teaspoon of bicarbonate of soda. 1/2 teaspoon of cinnamon. 1 teaspoon of vanilla extract. 4 fl oz of soya milk. 1/2 cup of coconut oil. 3/4 cup of date syrup. Pre-heat the oven to 360F/ 180C.
