Friday, January 6, 2017. RAVA DOSA / INSTANT RAVA DOSA/ SUJI DOSA. 1/2 cup rava (sooji). 1/2 cup rice flour. 1 small sized chopped onion. 1/2 tsp mustard seeds (raai). Salt and green chilli to taste. Some freshly chopped coriander leaves. 2 cups of water. Mix together rava, rice flour, Maida and salt. Add chopped onion, green chilli and coriander leaves. In oil or ghee, add mustard seeds and roast till it starts crackling, add curry leaves. Transfer this in batter. 1 Mix rava, rice flour, Maida and salt.

Saturday, April 18, 2015. 1 tbsp wheat flour (Maida). 1/2 cup milk (normal temperature). 1/4 cup cottage cheese (Paneer). 1/2 cup nuts (cashew-nut, pistachio). 1 tsp cardamom powder. 1 tsp cardamom powder (elachi powder). Make small balls. Fill chopped nuts and cardamom powder in the centre, close it and give it a round shape. Heat oil, it should not be too hot. Deep fry the balls on low flame. Take it on absorbent paper and immediately put in sugar syrup. 2 Once sugar is completely dissolved strain it.

SEMOLINA / SUJI VEG BALLS. 1 finely chopped onion. 1 large finely chopped carrot. 1 finely chopped capsicum. 1/4 cup boiled corn. 1 tsp dried parsley (optional). 1 tsp chilli flakes. Salt and pepper to taste. In a pan, melt butter, saute onions till it sweats. Add chopped carrot and cook for some time till half done (don't cook it completely). Add rest of the vegetables with salt, pepper, oregano, parsley and chilli flakes. Make medium consistency batter using cornflour and water.

EGG- LESS COOKER FRUIT N NUT CAKE. 1 1/2 tsp baking powder. 1 tsp baking soda. 1 cup wheat flour (Maida). 1 tsp vanilla essence. 3/4 cup condensed milk. 1 tsp lemon zest (grate the outer skin of lemon). 1 cup nuts of your choice , I used almonds, walnuts, dates, choco chips, dried cherry, raisins. Powder together 2 cardamoms (elachi), 1/4 stick cinnamon (dalchini) and 1/4 nutmeg (jaifal). Add nuts and raisins mixture. Mix well. Let it cook for 45 minutes to 1 hour and enjoy!

DATES AND NUTS BAR / DATES BROWNIE. 1 cup de-seeded dates. 2 tbsp cocoa powder. 1/2 cup chopped nuts (mix of almonds, cashews, walnuts). 1/2 cup dessicated coconut (coconut powder). 2-3 tbsp sugar (if required, depending on the level of sugar one want). Remove the seed of dates and chop roughly. Put it in the food processor and blend well. Add nuts of your choice I added almonds, walnuts and cashews. Blend again. Add coconut and cocoa powder and pulse again. 3 Add nuts. Blend.
