I’ve made a bunch of different styles of Carrot Cake and this one is my favourite. It's heavy and rich and grand. I used to make it for Kingfisher Organic Bakery in Melbourne. Cooking gets you laid more than playing gigs-if you do it right. 175g melted unsalted butter. 1C (cup) ground almonds (you can grind your own nuts, it’s cheaper, grind them with the sugar to stop it turning into paste). 1t (teaspoon) vanilla extract. 1-11/4 C ground raw sugar or castor sugar. 1/2 C plain flour. 1 Read the WHOLE recipe and then preheat oven to 180ºc.

I like to do all sorts of things with poached or stewed fruit; pears are particularly good with chocolate so I’ve included a ganache recipe. I also like these on their own, in the syrup, with ice cream, sorbet or crepes. 1 cinnamon stick or vanilla bean. Juice of 1 lemon. 1 litre of water. 4 Leave to cool and serve at room temperature.
