What's Cooking at Highbury Hill. Saturday, June 2, 2007. Rhubarb Strawberry Summer Soup. 15 to 20 large Rhubarb stalks. 4 cups cold water. Salt and coarse ground pepper. Small amount of lemon juice optional to taste. Wash and cut the ends of rhubarb stalks. Wash strawberries and cut stems. Cut rhubarb stalks in 2 cm. chunks. Place rhubarb and strawberries in pot, add water. Add sugar and a dash of salt. Heat to a boil then lower heat to medium and cook for 20 minutes, stirring occasionally.

Fiji water or white wine only if needed. Salt, Pepper to taste. 2 cups Parmesan cheese coarsely grated. Cut the onions in 1 cm cubes. Cut the Berendjenas in 2.5 cm cubes. Cut tomatoes in 8 pieces each. In a deep frying pan sautee onion in vegetable oil until soft and transparent. Add salt, pepper and crushed garlic cloves.

What's Cooking at Highbury Hill. Saturday, June 2, 2007. Sweet Potatoes in Honey Ginger Sauce. 4 medium Sweet potatoes. 2 cups of honey. 2 small garlic cloves (grated). Or Cilantro finely chopped. Peel sweet potatoes and cut in quarters. In a pot heat honey, lemon juice, garlic , ginger root, salt and pepper. Adjust to taste. Add cut sweet potatoes, stir well and cook at medium heat covered for about 10 to 15 minutes. Stir occasionally to avoid burning. When cooked add parsley or cilantro before serving.

Put the oranges and the lemon in a saucepan and cover with water. Heat to a boiling, then reduce the heat, cover and simmer for 30 minutes. Drain and cool. Cut off the stems ends and cut fruits in quarters and using food processor chop finely, but do not puree. Drain and set the fruit aside. Place cake on platter. Fantastic pictures. Wow.
