Another truly wonderful Caribbean-inspired dish is one taken right from the cookbook written by the owners of the Sugar Mill Hotel on Tortola, BVI. Avocados grow bountifully in the Caribbean when in season. They are one of my absolute favorite produce-items, as they are rich, creamy, and so good for you! 1/4 cup butter, melted. 3 green onions, minced. 1 garlic clove, minced. 2 tbsp minced fresh basil. It’s been in the same dumpy little park for over 20 years, and it doesn’t look like it’s changing anytime soon. Both the tourists (who are lucky enough to know about it) and the locals alike love it!
