It should be entered into with abandon or not at all. 1 Tablespoon smooth apricot jam. 1 Cup seld raising flour. 1 Teaspoon bicarbonate of soda. 1 1/2 Cup cream. 1 Beat egg, sugar and jam together on high for - 15 minutes. 2 Sift flour, bicarb and salt into a bowl. 3 Melt butter and add vinegar. 4 Add milk to egg mixture alternately with flour. 5 Fold in the vinegar/butter mixture. 6 Pour into an ovenproof dish (about 25cmx25cm). Heat all the ingredients until it just starts to boil.

One of the most refreshing and delicious drinks for summer is Pimm's Lemonade. This is a favorite of mine and was introduced to me by a friend. It truly tastes just like lemonade, perhaps a bit more complex. The Pimm's stays in the background and the mint gives it a cool, fresh finish.
