Having never made biscotti in any guise before I found this recipe a bit of a challenge. The main problem was judging when the biscotti loaf was cooked through the first time. As Free From flours don’t colour well, it just looks very white! As a result the biscotti crumbled a bit when cut, which led to a little unevenness around the edges. Free From Bake Off. Apple and Pecan Loaf. 50g pecans, roughly crushed. 200ml almond flavoured soya yoghurt. 2 tsp baking powder. 05 tsp bicarbonate of soda. 2 peeled and diced Granny Smith apples. 50g light brown sugar. 100ml vanilla flavoured soya milk. 1 heaped tsp arrowroot powder. 1 Preheat oven to 200 degrees. 5 Add flour to yoghurt mixture and beat well until fully blended.
