We are not a huge organization, but we do have great fish! We offer salmon in several varieties. All are line caught wild king (Chinook) salmon from sustainable Pacific waters. The fish we offer at Dungeness Seaworks is individually line caught dolphin-safe, wild Salmon from sustainable areas that are not overfished. Humanely handled after it's landed, the fish is frozen within an hour while still at sea. Freezing at sea results in a product that is far fresher than most fresh fish which has often been on ice for a week when you buy it. Our steaks are sawn from frozen fish and vacuum packed to seal in that freshness for six months or more.

Salmon Baked with Herbs. If you would like to slow cook the steaks in the oven, place salmon in a foil-lined shallow pan, and spread some garlic butter and herbs over it. Parsley, dill, rosemary or marjoram work well, also a little lemon or lemon pepper. Bake for 45 minutes or so at 350 (until the fish is flakey). Pete's Smokin' Salmon Brine. Heat and stir all ingredients together in a saucepan on warm just enough to get everything to dissolve. Cool. Frozen so fast, it's practically still swimming.
