Gingerbread Boy: Toffee Popcorn Bark
http://www.gingerbreadboy.co.uk/2012/01/toffee-popcorn-bark.html
I had to look at this lined tin every day for a month. Happy New Year to you. I trust you had a lovely break from routine to enjoy the festivities? I certainly appreciated time with family, great feasts with roast beasts, and a some quality Christmas television. Without wishing to sound negative though, I've been bothered by headaches and colds through most of November and December. This kept me out of the kitchen, and at times, off work. I lined my 20 x 30 cm baking tin. And 2 medium or large bowls.

Gingerbread Boy: January 2012

Pistachio and Cranberry Cookies. The week before Christmas is a busy time for most people. I was particularly busy in the kitchen baking lots of treats as gifts. This "make ahead" recipe was brilliant as I prepared the dough a month in advance, meaning that it was very quick to finish the bake one morning. The recipe used was another from November 2011 BBC GoodFood Magazine available here. In a large mixing bowl. I added 175g of Flora Buttery. Rather than softened butter), 85g of golden caster sugar.

Gingerbread Boy: November 2011

Spiced Toffee Apple Cake. Spiced Toffee Apple Cake. This cake was on the cover page of November 2011 BBC GoodFood magazine and is available here. Designed as an alternative to toffee apples on Bonfire Night, I made it for just that purpose. It was hit. You can use fresh dates, but I have had good results with dried dates which keep well in the store cupboard. I think the food processor. Are essential. You'll need a 20 x 30 cm baking tray. I used a stainless steel small saucepan. 200g chopped dried dates.

Gingerbread Boy: Chocolate Marzipan Sweets
http://www.gingerbreadboy.co.uk/2012/01/chocolate-marzipan-sweets.html
After my haphazard attempt at panellets. Unwrapping the first 300g block of marzipan. I was cautious as to whether it had gone off. Fortunately it did not smell at all bad, and had become quite dry and very hard to work. This lack of moisture was important to it staying fresh. I prepared a tray with a silicone mat. You could use greaseproof paper, but I prefer these. In a medium glass bowl. Over a small pan of simmering water. I melted 200g of Tesco Finest Swiss Plain Chocolate with Mint. I then just fol...

Gingerbread Boy: Panellets
http://www.gingerbreadboy.co.uk/2012/01/panellets.html
I like it when things go well, and I like to be proud of what I do. It's not really in my nature to present my failings when the results don't meet my standards. However, we can learn from mistakes, and move on and grow. I finally found the name 'Panellets' and then went hunting for recipes. I settled on this recipe I found, that also introduced me to this great site theydrawandcook.com. So I'd mixed 500g of caster sugar. With 500g of ground almonds. This didn't sound quite right. You can see here that t...

Gingerbread Boy: About the Boy
http://www.gingerbreadboy.co.uk/p/about-boy.html
Like many people, I rediscovered baking whilst watching the BBC's Great British Bake Off. I do have a sweet tooth and love cakes, biscuits, and sweets. Whilst I do try to cook savouries from time to time, it never gives me the same satisfaction as baking something sweet. Growing up I used to bake with my mum. Its only when looking through old family photos I really appreciate some of the the baking projects (mostly birthday celebration cakes) I've worked on. Subscribe to: Posts (Atom).

Gingerbread Boy: Traditional Christmas Pudding
http://www.gingerbreadboy.co.uk/2012/11/traditional-christmas-pudding.html
I remember that last year I missed the opportunity to make a Christmas pudding. I thought about it far too late and was preoccupied with present shopping and various parties. This year then, whilst fellow bakers were planning their Halloween masterpieces, I was reading up on Christmas puddings. At just £5 I knew I'd not regret the expense. I'd considered the 2 pint bowls, but with all the other foods available at Christmas, a 1 pint pudding would be right for our table. The Royal Christmas pudding recipe.

Gingerbread Boy: January 2013

My First Gingerbread House. The goal - A professional build. Pre-cut templates, a baseboard, and a tub of all the sweets needed for decoration. What I didn't get included on the print out was the many helpful comments from other home bakers that have tried this recipe. These I only found after completing my house. Rather than rolling out on baking paper I chose to try my silicone baking mats that seemed to work fine. I used icing (confectioners) sugar to help stop the rolling pin sticking and cut out...
