March 26, 2013. I can probably count the number of times I’ve eaten tofu in the past couple years on one hand. Sure, there are a lot of recipes that I love that use the stuff (. But I just never really jumped on the soy bandwagon. So what’s a girl to do when she wants a neutral vegan protein base for recipes but eschews soy because of the potential health risks? Thankfully the good people of Burma have the answer: chickpea tofu. 2 cups chickpea/garbanzo bean flour. 1/4 teaspoon ground turmeric (optional).

I’ve lived in a shiny and beautiful new house, a cute rustic cottage in the rainy and lush valley, and across from the beach (and my favorite surf break! Cambodian Pomelo or Grapefruit Salad. 3 large grapefruit or 1 to 1-1/2 pomelo. 1-1/2 Tablespoons fish sauce. 3 Tablespoons lime juice. 1 Tablespoon palm sugar (can substitute brown or white sugar). 2/3 cup chopped mint.

The temperatures have been rising around here and since I’m fundamentally anti-air conditioning, I have to resort to other methods to stay cool. And when I can’t get to the beach or pool, frozen desserts are my favorite way to beat the heat. I was perusing this Ice Cream and Frozen Desserts. Cookbook last week and the Frozen Hot Chocolate recipe caught my eye. But this version sure hit the spot.

Cornbread, of course, can take many different shapes and forms, not to mention bonus flavours and the eternal debate between sweet/not-sweet that rages through the Americas. My favourite, growing up, was Southern Spoon Bread, a cornbread leavened with beaten egg whites into a lusciously light accompaniment to almost any meal. But I like all kinds of breads made from corn. 1/2 cup 1% milk.
