Sunday, April 28, 2013. Who doesn't love pesto? It's super yummy and versatile - it can be used as a sauce, dip or spread. I hope you enjoy my basic pesto recipe. 1 cup cashews soaked a minimum of 4 hours. 1/2 cup pine nuts soaked for 20 minutes. 1/4 cup raw pumpkin seeds. 2 cups fresh basil. 1 bunch of fresh parsley or a handful of fresh oregano. 3 garlic cloves peeled or 1 shallot. Juice of 1 lemon. 1 tablespoon raw hemp seed oil or olive oil (optional). Salt and pepper to taste. Labels: raw vegan pesto.
