We have some very good salts right now. Flor de Sal d'Es Trenc. Harvested with traditional rakes from the Es Trenc beaches of Mallorica, dried in the sun, and blended by Michelin Star chef Marc Fosh. So far we've brought in Rosa (with rose petals and Sarawak and Sechuan peppers) and Olivas Negras (with roasted kalamata olives) and we're very impressed. The aroma alone is pretty unbelievable. Recipe: Apple Panettone Pudding. As if Panettone weren't tasty enough on its own. A 250g Panetonne, Crusts lightly Trimmed. 5 ml Lemon Zest. D 30 ml Dried Cranberries. E 1 Apple Large, Peeled 5mm dice. Good pinch Nutmeg and Cinnamon. F 30 ml Butter. 1 Dice (A) into 1cm cubes, place in a large bowl. 2 Combine (B) and scald over medium heat. 3 Combine (C) and whip until smooth. 4 Slowly stir in (B). 5 Add (A), fold in gently, let stand 5 minutes. 6 Combine (D), bring to a simmer, cool briefly, add to (A).
