Tuesday, March 2, 2010. Sweet and Sour Chicken. Sweet and Sour Chicken. 3 to 4 boneless, skinless chicken breast, cut into chunks. Salt and Pepper, to taste. 2 eggs, slightly beaten. 1/4 cup canola or vegetable oil. 1/2 cup vinegar (preferably rice or white). 1 tablespoon soy sauce. 1 teaspoon garlic powder. Preheat oven to 325 degrees. Season chicken with salt and pepper. Place the chicken in a single layer in a 9 x 13 baking dish. Bake for 1 hour, turning the chicken every 15 minutes.

The cold weather makes my body crave something warm and comforting. Combine my craving with the benefit of a slow cooker and it's a win-win. The recipe comes from America's Test Kitchen Slow Cooker Revolution. Slow Cooker Tex-Mex Chicken Stew. 2 onions, minced. 2 jalapeno chiles, stemmed, seeded, and minced. 6 garlic cloves, minced. 1 tablespoon tomato paste.
