I made a New Year’s Resolution to try to write something here once a month and made it through March! 1 lb Mahi Mahi fillets. 1 C Shredded unsweetened coconut (try a health food store or Asian market if you can’t get this in your supermarket. Sweetened would just not work here.). 3/4 C Coconut milk (original, not vanilla). Pepper (I have a pepper mill so I don’t measure; just put in however much you like.). 1 small red onion, diced.
