Sunday, June 20, 2010. During the month of June our church held an essay contest entitled "I Love my Dad". It was open to grades kindergarten through 6th. Katie told Don she wasn't going to enter, but secretly wrote an essay. I received a message from our children's minister last week notifying me that Katie won in the 4th-6th grade division. She and I were so excited! Don and Sarah were in San Antonio last week with our church on Mission Trip. Ch and I'm proud to call him my father. What more can I say?

TJs cabernet chuck pot roast (about 2.5 lbs). 15 cups chicken broth. 1/4-1/2 cup red wine. 2 lbs baby carrots. 3 lbs baby red potatoes, quartered. Butter or butter substitute. Heat IP on high saute, add olive oil to coat bottom of pan, brown roast on all sides. Deglaze pan with a splash of chicken broth, add remaining chicken broth, red wine (or more chicken broth) and a splash of apple cider vinegar. Remove veggies and roast from IP.

Saturday, April 14, 2012. I love beans. I wanted to learn how to make my own refried beans, so I did some googling and tried a recipe. I'll never eat refried beans from a can again! You can make a large batch of these and freeze them for later. 1 onion, peeled and halved. 3 cups dry pinto beans, rinsed. 1/2 jalapeno, seeded and chopped (don't get too crazy about chopping this too small- these beans cook all day and the vegetables pretty much melt into them). 2 Tb garlic, minced. 1-2 tsp black pepper.

They are often called “angels wings” since they resemble that shape. But, at the end of the day, they are deliciously light and airy pieces of fried dough, covered with powdered sugar. I believe every culture has their own version, but to me, the chrusciki will always be the benchmark. Makes about 7 dozen cookies.
