After a longish pause, both the Great British Bake Off and my blog are back and in honour of the first show last week, I have made a gluten-free, dairy-free Madeira cake. I even managed to get a good crack on the top! I’ve avoided any radical flavourings, sticking to the traditional citrus. I’ve chosen lime, which I think complements the coconut well. Grated zest of 1 lime.
