Happy Anniversary, Arequipa! On the rooftop of a restaurant in the Plaza de Armes in Arequipa, with the cathedral (built in 1612) and El Misti (volcano) in the background. We always thought the Tupelo Christmas Parade was too long, but wow, this one is really long! We didn't get to the parade until about 3 and stayed a couple of hours. There were dancers and floats, with natives from all over South America dressed in beautiful costumes! Aside from the parade, the people here celebrated with fireworks!

This pork roast is honestly the first one I've ever used that I really love, and it will be a "keeper" in our family for many years, I think. I've now made this several times, before we moved to Peru and three times since we have been here. Everyone seems to love it, and it's great to serve a crowd or for a weeknight family meal. Onion, finely chopped. Jar plum jam or jelly. For roast, preheat oven to 325. Rub pork loin with salts and pepper and place in roasting pan. Serve the remaining sauce with pork.

One thing that never changes here, is that things are never the same! A few things that have been going on this month. Despite the difference in culture, kids are the same everywhere!
