This is a great quick breakfast that provides 1 serving of fruit and 1 serving of vegetables. 1 piece whole grain bread (I really like Arnold Natural Flax and Fiber). 1 oz cheese (Try Laughing Cow Light, Creamy Swiss). 1/2 C red, green, and yellow bell peppers chopped. 1/4 C cucumber sliced. 1/2 C baby spinach. Garnish with the fruit of your chose (I found these really great plum-nectarines).
