Sunday, December 28, 2008. It only took me 30 hours to get here! I flew out of Detroit on the 26th at 1:45 pm and the adventure began. When I left my moms house in Michigan the roads were covered in ice. I had to drive 20 MPH for 1 1/2 hours! Most of the other teachers are from South Africa and it has been fun to get to know them. I have been spending some time with a guy named Nate who is from Birmingham Alabama. He is a great guy and this is his first time at the camp as well. Love, Joy and Peace!

So, here's the recipe. straight out of Better Homes and Garden's cookbook - one of the best wedding gifts ever! 1 Tbsp. olive oil. 1 Tbsp. fresh snipped chives. 1 Tbsp. fresh snipped basil. 1 Tbsp. lemon juice. 1 clove garlic, minced. 2 cups chopped roma and/or yellow tomatoes (3-4 medium tomatoes). 1/2 cup finely chopped red onion.
