Snacks, Apps & Sides. I love to create. I love to eat. I love to explore and have adventures. I love to use healthy ingredients and know why they are good for me. I hope you enjoy my blog and that you are inspired to try something new! My best advice: Don't be afraid to experiment, try new ingredients and break away from the recipe. If you fail- you just learn how NOT to do something next time! November 13, 2015. 1 can cannellini beans. A few tablespoons of olive oil or oil of choice (I love avocado oil).

One Step at a Time. Wednesday, May 6, 2015. Why I Won't be Crying in the Corner on Mother's Day. So why does the thought of Mother’s day usually make me cry? Why do I get a knot in my stomach when I think about it? Because I’m not a mother. It reminds me of a story we learned about a few weeks ago in the kid’s ministry at church. We learned about Bartimaeus, a blind beggar who waited by the roadside for Jesus to pass. He wore a cloak that represented his status to the world. The cloak t...Many were stern...

One Step at a Time. Wednesday, March 11, 2015. If we only knew. I'm sitting in the waiting room in NYC about to get my CT scan. It's amazing to me to think of the number of times I've been in this same place. The amount of feelings over the last three years every time I have to sit in a waiting room, drink oral contrast, get an IV, walk back to a scan, wait for results. I have felt a lot of anxiety in the past. These scans determine so much for a cancer patient. Is my current treatment working? Jesus ans...

One Step at a Time. Saturday, November 1, 2014. Wow it’s been a crazy little bit of time! I’m sorry I haven’t updated you in a while about the progress we’ve made, but we’ve been pretty busy! I had a CT scan about three weeks ago to see if this new treatment was working and….it is! My tumors are decreased by about 60%. Most of them are under 1 cm now, which is fantastic! I feel great, my Hodgkin’s symptoms are gone and I finally have energy again! However, I struggled to really embrace this good news.

One Step at a Time. Thursday, July 16, 2015. Then things got worse when the hail began. We looked at each other in disbelief and I saw concern on my husband's face as we hard another crack of lightning and a tree fall, this time not too far from us. The hail was about the size of a pea, maybe a bit larger, and didn't feel great on my bald head! We prayed that the storm would pass and like all storms, it did. Happy Five Years. Here's to many, many more! Tuesday, July 7, 2015. Found out in November 2012 th...

One Step at a Time. Wednesday, May 7, 2014. WellMy miracle still hasn't happened yet. My breakthrough hasn't come yet. And my wounded heart is beginning to believe it never will. The new spot has grown from 1 to 2 cm but I have several new nodes that are infected. The cancer is growing. The cancer is spreading. I can't qualify for any clinical trials until we can do a biopsy and none of the nodes are big enough to biopsy. So we wait two more months and try again. My hope is growing extremely thin. I ...

One Step at a Time. Wednesday, December 31, 2014. A Thirst for Living Water. Well, I cannot believe that we are on our last day of the year 2014! This year has definitely had it's ups and downs, but I'm grateful for it. As I look into the face of 2015, the third year of my life plagued by cancer, the year I will turn 30 (yikes! And the year I will celebrate 5 years of marriage to my best friend, I have so much to be thankful for and so much I want to accomplish! I still struggle to memorize scripture on ...

One Step at a Time. Thursday, January 15, 2015. Well, I don't have much time, but I wanted to give a quick update and share a little something from James! I have been in New York this week and got a scan on Tuesday. I got the results today that my tumors have now decreased by 90%! The doctor said that most, if not all of the lymph nodes are in the normal range and one in particular they have been watching didn't even show up at all on the scan! My living water challenge has been going well! Suffering is ...

Kitchen Time-Out: Capiz and Boracay Trip. Posted in Time-Out From the Kitchen. Did you notice that milestone widget on my sidebar that said we were on vacation about two weeks ago? Okay So we’re back from our trip. I was busy and idle at the same time that I couldn’t write about anything. Thank God, Gadiel somehow looks better now after he was diagnosed with pneumonia (again) two Sundays ago. And while he sleeps right now, I manage to create a post about this trip. October 8, 2016. I love donuts but I don’t have the patience to wait for dough to proof and I hate frying things, so this recipe is perfect for me. No yeast, no proofing, no frying. Dirt bombs are basically baked cinnamon donut muffins coated in cinnamon sugar. Once they’re baked they have a crusty top but are still fluffy on the inside. When I first found this recipe I made these dirt bombs twice in one week. They’re so easy to make and even easier to eat. Dirt bombs (aka baked cinnamon donuts). While t...
