昼休みに家の畑に野菜を取りに行ってきました。最近はサニーレタス、ブロッコリー、ホウレンソウ、カリフラワー、キャベツなどなどいろんな種類が出来ています、. 今週も フォン・ド・ヴォーを取っています. まだまだ沢山の種類があります。かぼちゃ、きゅうり、とまと、じゃがいもetc収穫が楽しみです. それは営業後の掃除です（当たり前の事ですが）。壁、床、シンク、コンロ、すべて洗剤、漂白剤で洗い流しピカピカに洗い上げます. 私は五歳、二歳、六か月、三人の子供もオヤジです. 仔牛の骨、牛すじ、牛肉、香味野菜を炒めたりして色つけます. このフォン・ド・ヴォーはボルドレーズ、ペリグーソース、ソースポルト、ソースマデール、グラスドヴィヤンド、などなどいろんなソースのベースになり予約制のコース料理等に使います。 これにまた牛すじ肉、牛肉、ミルポワ、トマト、トマトペースト、ブーケガルニ、赤ワイン、マデラワインetc加えて三日間一度も夜も点けっぱなしで火を消すことなくデミグラスソースをつくります. みなさま “ はじめまして！”.
