Lauren's Kitchen: August 2011
http://lacucinadilauren.blogspot.com/2011_08_01_archive.html
Follow the journey of a busy mom as she strives to keep her family happy and healthy. Thursday, August 18, 2011. I've really been enjoying making pizza for my family every Friday night. I might even be ready to *gasp* try making my own dough! When deciding on take-out, my husband usually chooses pizza while I tend to gravitate towards Chinese. This collaboration, however, satisfies us both. Oh, the deliciousness; another keeper from Stephanie Cooks. 5 ounces of chicken, chopped into small pieces. I parti...

Follow the journey of a busy mom as she strives to keep her family happy and healthy. Thursday, June 30, 2011. I'm really not a huge side-dish-during-the-week kinda person. If my main dish doesn't already have a veggie in it, I'll throw a frozen bag into the microwave and call my meal balanced. Now that I'm on summer break, however, I'm trying to be better about serving fresh vegetables and this one from weelicious. 2 Cups Broccoli Florets. 2 Cups Cauliflower Florets. 2 Tbsp Low Sodium Soy Sauce. Before ...

Follow the journey of a busy mom as she strives to keep her family happy and healthy. Monday, September 29, 2008. Pumpkin Cheesecake Ice Cream. My second encounter with the ice cream maker didn't go quite as smoothly as my first, but it wasn't too bad. I am not having luck finding Ben and Jerry's Pumpkin Cheesecake Ice Cream, so I figured I'd make my own! The taste, however, was freaken fantastic! 1 1/2 cups light cream. 8oz cream cheese (low fat is okay, but avoid fat-free), softened. 3 Assemble ice cre...
Lauren's Kitchen: Taco Stuffed Peppers
http://lacucinadilauren.blogspot.com/2011/03/taco-stuffed-peppers.html
Follow the journey of a busy mom as she strives to keep her family happy and healthy. Tuesday, March 15, 2011. My most recent recipe exchange dish came from my friend Kelly. I admit I was skeptical - I only just recently discovered that maybe I DO like peppers, so I was nervous that this would be a bit too in-your-face for me. I changed a few things to accommodate our palates as well as what I had on hand, so check out Kelly's site for the original. Adapted from Running Mama Cooks. 1/2 C cooked couscous.

In an attempt to make sure the bottom of the chicken didn't get too soggy, I put cooling racks on a cookie sheet and baked the chicken on top of that. I don't know that it worked any better than putting the chicken directly on the cookie sheet, but it can't hurt. 1/2 cup butter (I used olive oil). 4 cloves garlic, minced.
