With the North Norfolk Food Festival at Holkham looming (3rd/4th Sept), I’ve been locked in the honey house for most of the last week, extracting (spinning) honey for bottling, and am now filling clip top jars with cut comb honey from the apiary next to the tidal marsh at Brancaster. Almost time for the honey harvest.

A limited supply of comb honey is available from time to time. The strongest colonies are given empty frames with a tiny amount of beeswax at the top to encourage them to build their own comb. If the honey flow is good and the weather on our side, the bees will fill these frames with exquisitely built comb.
