This is perfect for a warm summers night and reasonably quick if you use a mandoline. If you have some fresh herbs throw them in! 1 smoked chicken breast, shredded. 1 large carrot, finely julienned. 1 avocado, 1cm dice. 1 red pepper, finely julienned. Red onion, finely julienned. 1 tbsp sesame seeds, toasted (garnish).

Great as a lunch or light dinner this recipe makes the most of spring vegetables. 1/2 cup or orzo pasta, cooked. 1 red pepper, roasted. 1 bunch green beans, blanched and chopped into 3cm pieces. 1 bunch asparagus, blanched and chopped into 3cm pieces. 40g tasty cheese, chopped into .5 cm cubes. 35g flacked almonds, toasted. 2 tbsp olive oil.
