此一新屋為四方形，外牆為紅色，故鄰近村民多稱之為 四方樓 或 紅樓。 鍾秀長從事金銀兌換生意，在香港干諾道西開設 德和 經營此業務，亦開設 和昌洋行 從事貿易生意，而鍾太太也開設了生產肥皂的 紹昌洋行 ，他們的家族在干諾道西也經營一家 中國冰室。 故此後來 龍華 啟業後，彩嫂一直受僱於 龍華。 戰後，鍾太太從日軍手上收回此物業，並考慮將 四方樓 改為食肆，由於本身飼養白鴿，加上沙田市面上有雞、鴨和魚等菜式，獨欠鴿類，遂當試推出乳鴿，結果廣為受落，並成為沙田遠近馳名的美食 沙田乳鴿。 鍾鑑檸最終借助了 英文虎報 陳夢茵所負責介紹之食譜及 文匯報 每日一篇之 教女入廚 ，鍾鑑檸負責閱讀及翻譯，何柏便邊聽邊做，經過不斷鑽研，試驗成功的菜式便列入食譜，久而久之何柏竟成為名廚。 自中國大陸政權易手 (1949年) 後，由內地遷港之大鴿場計有 模範鴿場 及 新生鴿場 (黃竹坑)、 合群 (大埔) 、 和平 (藍地) 及 頤園 (屏山)。

本草綱目 記載 鴿羽色眾多，唯白色入藥 ，從古至今中醫學認為，鴿肉具有益氣補血、清熱解毒、養顏美容等功效。 我們的則不會 吊皮 ，先將鴿烚一烚再 在滷水汁浸熟，上糖炸，那樣鴿皮就會色鮮香脆。 聽唯靈說沙田有三寶，那就是 山水豆腐花 、 明火靚雞粥 和 龍華乳鴿。 所謂 沙田三寶 ，是指當時沙田區內三種最受遊人和旅客歡迎之食品，包括紅燒乳鴿、雞粥和山水豆腐 (包括以山水豆腐為材料之小菜和甜品山水豆腐花)。 即使時至今日，沙田區內仍有不少食肆以 沙田乳鴿 及 沙田雞粥 作為招牌菜式。 據悉，沙田雞粥煮法有二，其一是預先將雞隻煮熟，待客人點菜後，才將煮熟之雞隻斬件，放進碗中，最後將已煲滾之粥倒進碗中奉客 另一種是待客人點菜後，才將已斬開之雞肉放進盛粥之小煲內一併 生滾 ，令粥更有雞肉味，雖然時間稍長及過程稍繁複，但味道較佳。 為何六十年代，沙田雞粥可以風靡港九 據分析，當時晚上來到沙田舊墟夜 市的市民，大多已是吃過晚飯，加上那時的人消費能力有限，夜間之消遣娛樂更不及七十年代後期般豐富，故此，很多人在市區駕車到新界 遊車河 ，順道呼吸新鮮空氣。
